Hey guys. As some of you read in my report, I caught a bunch of albacore last sunday. I had the fish on ice and filleted them on monday afternoon and they were then put in my freezer. They have been frozen for a good 3 days now and I was wondering if anybody has any insight on preparing sushi?

I have heard to freeze it for a couple days to kill any potential bacteria or parasites. I have done that. Is there anything else I should know before eating some sashimi raw tonight?

Let me know!!

Thanks guys,

Jason

Nice!! I am being told to slice it up into sashimi pieces and wrap it up in a towel or paper towels to soak up the moisture and put it back in the fridge overnight to firm up. Then eat it the next day...ahhhh that doesn't work for me because I have a lady coming over tonight to eat it!!
